Everyone and their mum seems to be using encrypted messengers these days, whether as a deliberate privacy choice, or just the app they always used has now enabled it by default. This article I found takes a look at what kind of data and metadata police forces can obtain from some of the more popular apps. Signal (which is what I use) seems to be leading the pack, only storing the date and time a user registered and the last date they connected to the service.
